  1. Wash the rice 3 to 4 times with clean water and soak it for about 1/2 an hour. Peel and grate the beetroot as well. keep aside.
  2. Heat oil in a heavy-bottomed vessel, after the oil is medium hot, add cumin seeds and all the whole spices, and let them crackle. then add chopped onions and fry them till they turn nice golden.
    Now add ginger, garlic and green chilli. Add chopped tomatoes and cook for 1 minute while stirring.
  3. Now add grated beetroot and cook on medium flame while stirring for 2 minutes.
  4. Now add turmeric powder, salt, Kashmiri red chilli powder and mint leaves and mix it well.
  5. Now add about 2-3 cups of water and after a boil, add soaked rice and stir. Allow the rice to boil on high flame and then reduce the flame again and cook the rice by covering it for 10-12 minutes. (till water completely soaked).
  6. Turn off the heat and leave the rice in the steam for about 5 minutes. Do not open the lid immediately. Add coriander and mix.
  7. Delicious beetroot pulao is ready to be served.
