- 200 g tub Cream cheese
- 100 g/1 cup Walnut halves
- 1 tbsp snipped Chives
- Coarse-ground black pepper (freshly ground)
- 50 g/half cup corn kernels, fresh or frozen
- Small handful coriander leaves/cilantro
- (optional) dash of green jalapeno Tabasco
- Squeeze lime juice
- 1 small cooked beetroot
- Small sprig mint leaves
- (optional) pinch smoked salt

- Take the cream cheese out of the fridge a half hour before making the spreads
- Heat the oven to 150C
- Put the walnuts on a small baking tray and toast in the oven for 7 minutes exactly.
- Take the walnuts out of the oven and allow to cool slightly before chopping them quite finely.
- Stir the walnuts and cream cheese together in a bowl (this is the base for all three spreads)
- Finely dice the beetroot and place in a small bowl.
