Ingredients and spices that need to be Prepare to make Pav Bhaji:

  1. 2 big potato,
  2. 1 lemon
  3. 1 big + 1 medium onion,
  4. 1 medium carrot,
  5. 1 medium beetroot,
  6. 3-4 medium tomatoes,
  7. 8-9 French beans,
  8. 1 medium capsicum,
  9. 8-10 florets of cauliflower,
  10. 1/2 cup green peas,
  11. as required handful of finely chopped dhaniya
  12. 1 tbsp ginger garlic paste or finely minced,
  13. 2-3 green chilli (slit)
  14. 2.5 tsp Pav bhaji masala,
  15. as per taste salt
  16. 1/4 tsp haldi powder,
  17. 1 tsp red chilli powder
  18. 1 tsp cumin seeds,
  19. 1 tsp schezwan sauce
  20. 1 tbsp oil
  21. 3 tbsp butter

Instructions to make to make Pav Bhaji

  1. Finely slice onion, chop tomatoes and finely chop all other veggies, boil green peas and keep aside.
  2. Boil potatoes, mash it and keep aside.
  3. In pan add oil +butter, wait for moderate heat then add cumin seeds, let it crackle and then add onion slices and sauté for 1-2 minutes till it turns pinkish.
  4. Then add chopped capsicum and sauté for few minutes, then add ginger garlic paste and sauté for few minutes till rawness goes off. Then add all chopped veggies except tomatoes and green peas and stir fry by adding sufficient salt for 4-5 minutes.
  5. Now add chopped tomatoes + potatoes, mix well and stir fry for 2-3 minutes then add all spices and schezwan sauce also. Mix well and stir fry for 4-5 minutes till spices fried well and oil shows on surface or spices leaves oil. During this process mash the veggies as much as possible, I prefer chunky so mashed lightly.
  6. Now add warm water as per requirement (gravy consistency) and cook / simmer for 3-4 minutes, add finely chopped dhaniya and check for salt too. Lastly add a spoon of butter, lemon juice and mix nicely.
    Bhaji is ready to serve.
  7. Now toast pav in butter by adding pav bhaji masala and serve with finely chopped onion and a slice of lemon.
