  8. 1 tablespoon Achari masala or coriander fennel seeds powder
  9. 1 tablespoon grated cheese
  10. 1/4 teaspoon black pepper
  11. Corriander for garnishing
  12. Sauce
  13. 2 small onions diced
  14. 4 medium tomatoes diced
  15. 4 Garlic cloves
  16. 1/2 beetroot
  17. 3-4 dry red chillies
  18. 1 green chilly(optional)
  19. 1 tsp oil
  20. 5-6 cashews
  21. 1/2 cup water

Steps to make to make Achari Vege Pasta

  1. Heat oil. Add 2 garlic cloves, chillies,onion, tomatoes,cashews and salt. Saute and add little water.bonce boiled, switch off the stove and let it cool.
  2. Heat water in a vessel and add salt.once water is boiled, add the pasta.let it cook for 8-10 mins. Strain the water and add some cod water. Let it cool down.
  3. Now grind the onion - tomatoes mixture and strain it to get rid of the seeds and peels.
  4. Now take a wok or kadhai. Add butter. Once butter is melted add crushed garlic. Add capsicum and mushrooms and saute for a minute.add salt, turmeric powder and Achari masala.
  5. Add the boiled pasta and cook for a minute.
  6. Add some grated cheese on top, black pepper and corriander leaves for garnishing.
