  1. Take maida,wheat flour,soji in big bowl,mix well,add salt,ghee,oil,carom seeds,black pepper powder,green chili garlic paste,.Mix everything well.
  2. Divide into three equal parts,now add water in white part, and knead tight dough,add 2drops ghee knead,cover,rest for 10 minutes,In second part add spinach purée mix well knead dough add 2 drop of ghee knead,cover,rest for 10 minutes,third part add beetroot pulp mix well knead dough,add 2 drop ghee knead,cover,rest for 10 minutes.after 10 minutes again knead with ghee for softness.
  3. Prepare saata,divide all dough into two portion.roll it,apply saata (ghee &rice flour mixture) on white roll,spinach roll & beetroot roll.on white roll keep the beetroot roll,then spinach roll,again white roll.
  4. Roll all four,cut in small pieces.
  5. Take one piece dust in maida,roll thick mathri,make marks with a fork.This help avoid the mathris puffing up while frying.
  6. Put the mathris in medium hot oil, fry mathri on low flame till they turn golden on both sides.serve in serving plate.😊🌈
